Apologize, offer the customer another type of drink on your tab.

Depends on what is ordered on how I react. The only time I get a little testy is when I get a complaint that there's no booze in the drink. Since I free pour I know either they are trying to get a double for the single price or they have had enough to drink. And I have been known to actually take a drink back and dump it out and tell the customer (one who does this everytime) Here is your shot of whiskey and I putting it in your glass and show them the whiskey and ice with out the soda. Believe me they quit saying they had a weak drink. (the first one was better than the 2nd)

Other than that I will happily fix them a new drink and find out what the problem is so it doesn't happen again. Or offer something more to their liking. I don't usually charge for a drink that they don't like and let me know right a way about it, but if nothing is said and it just sits there then yes they are paying for it. I do my best to keep the customer happy but sometimes you have to make a decision on whether or not they might be trying to see how much they can get from you by complaining.

even though most times this i snot true and the person treling you this probably does this all the time wherever he/she goes, you have to bite the bullet and say oh i am so sorry--ill make you another one or would you prefer a different type of drink-- on the house of course ---then if he /she tells you that oone is no good either just say I am sorry--looks like I can not please you.

apologize, ask what's wrong with it and offer another drink. Taste it yourself if you can - in the back, of course - to see if the soda's flat, or the orange juice is soured, or the liquor is too strong - you need to know what's wrong to avoid having it happen again

You say you're sorry, then ask if you might ask what is wrong,then fix him another...the customer(they say is always right) even if it goes against your grain. It's your job to keep customers satisfied.

You should apoligize and you should either fix him another one or ask if he would rather have something else then report it to your manager that there was a complaint.
