If a person knows your ID and password, they can access your account, read and sent e-mail, etc. Anything you can do, they can do. However, most e-mails will not let you both be in the account at the same time. You would get a message saying the account is already in use.
If you have reason to believe your account has been accessed, go in and change the password immediately. If the other person changes it first, you will lose your account.

Your e-mail can be open in 2, or more PCs at a time, but it might crash as it would have to keep updating itself if things get deleted or moved i guess that's if you have slow connection, otherwise if you log out and in again you will see the changes if any have been made by someone else! And you wouldn't know if someone had been looking at your e-mails unless they went missing.

It doesn't take much effort to change your password. Just make it a strong password so it is difficult to memorize and extremely difficult to guess. This Microsoft site gives good information on Strong Passwords.
