As an experienced knitter and crocheter - I don't think you will be making socks and sweaters any time soon. That takes a level of experience a beginner doesn't have.
My sister and I knit baby hats. Have an easy pattern that can be done up in a couple of hours. Easy patterns can be found on the internet.
We have made hundreds. Donate them to local hospital for the newborns. Have received thank you cards from the nurses and the new mommies. Nurses have even offered to take up a collection to buy the yarn. The new mommies love them compared to the basic white hats given by the hospital. We make bright colors - not always pastel. Do stripes sometimes. Have done some in local high school and professional football colors. Have done red and white for Christmas - or December babies. Red, white and blue stripes for 4th of July babies. We do this because we love to knit - have knitted and crocheted for years - and we certainly don't need any more hats and scarves and afghans ourselves. Nor does our family want any more.
You can also knit/crochet adult hats and scarves to donate to shelters.
Hat and scarf patterns are generally very easy and can be done up in a short amount of time. So this would give you experience and a level of expertise - while doing a good deed at the same time.
Good luck to you.

What can I make using crochet/knitting skills that isn't a sweater?
My mother wants to teach me how to knit since she's an instructor but I don't know what I'd do with the skill besides make socks and sweaters, and I ain't gonna make an afghan anytime soon. What other creative things can done with crochet or knitting?

there is a simple way to make a jumper for a baby girl, to make the skirt flair, start with 28 stitches, knit all 28 up and back, then knit 23 stitches up and back, then knit 14 stitches up and back, then repeat starting with knitting all 28 stitches.... etc, until the waist will fit around a new baby. when the skirt part is complete make a square to use as the bib, 14 stitches wide, and make the straps like for overalls 6 stitches wide. stitch 2 buttons onto the bib square, attach the bib to the front of the skirt and the straps to the back of the skirt, equal distance from the back center seam. you can make matching hat and booties, also, guaranteed to make any new mommy say awwww!
i currently am working on making slippers for the nursing home near me, i am wanting to make enough pairs that each patient will get a pair for christmas. i have more than 50 pairs done already.

I am presuming you are meaning things for a male, as your Icon looks to be male. Well, that leaves out purses, curtains, and other "girlie" stuff (unless you have female family members for whom you would want to knit or crochet things).
How about pillows for your bed or couch? How about a tie? How about a vest? How about stuffed animals for your favorite female friend? How about your favorite sports "ball": football, baseball, soccer, basketball, etc., etc.? How about a cover for your computer's desktop monitor? (What's wrong with an afghan? Do you not get cold in winter? A good "granny square" afghan works up pretty nicely in scrap yarns. Also good to share with a friend. How about making an afghan for your mother?) How about just knowing you can crochet and/or knit, and can impress a friend with your expertise? Handmade items impart more personal feelings than purchased items.
How about potholders? I have thanked mine more than once. Note: you need to use two squares (or circles) for one potholder, to make it thicker, so as not to burn yourself. How about placemats or hotpads? How about tablecloths? (BIG project, even bigger than afghans.)
Just a "few" things that can be crocheted or knitted... Hope you appreciate your mother's teachings! People are losing the art of crochet and knitting.

A friend made a scarf and gave me. Maybe coasters? Many ions ago, I made a wreath, by knitting around the plastic rings that hold a 6 pack of pop.

You can make gorgeous stuffed animals, there are patterns for all types of them. You can also make dishcloths and lots of stuff for the kitchen and bath. They are quick and easy and you can always give them away. People love to receive handmade things. Charities will always take any toys you make especially during the holiday season. Good luck and have fun!!!
