The What If series, which was not limited to Superman, was an alternate reality to the official storyline. Just as the title implies... the stories make an assumption that does not fit in with the ongoing series and creates a story around that premise. Sometimes things are worse, and sometimes they are better and sometimes they are just different.
I suppose there is a name for this style of writing, but it isn't limited to comics either. I'm pretty sure there are novels based on the premise that The South won the Civil War, etc.

In DC Comics what you're thinking of is called Elseworlds. The best one was called "Red Son", and had Superman landing in the Soviet Union insted of Kansas.

There may have been a cross over done that included Superman, but the "What If" series belongs to Marvel that, as stated previously, asks what would have happened if (Victor Von Doom became a Hero, Spiderman kept his 4 extra arms etc)
