Hide and Seek (the indoor version)
To help with education stick a bunch of magnetic ABC's on the fridge and let the three year old learn what they are, how to spell simple words, and it also helps with color when you get them multicolored (and I do mean a bunch not just one set of letters but several of each)
Thanks to ABC's my son was spelling by the age of three (like I said simple words: cat, dog, my fav. mom)

It depends on gender, but at age 3 I have found that the oversized, plastic blocks are a blast. For either boy or girl.

build a fort out of sheets over the table or around the couch with chairs...could also be a castle for a princess..
Draw a picture, have he/she color it in
stack tupperware up into towers then toss a ball to knock them down.

hide some of your shoes and some of hers or his
also hide one of the shoes u are wearing he hides yours and you hide his...whoever finds the mate to the shoe they are wearing first...wins
