How did the firmen know which houses had books and why did they always burn at night?

a) The Mechanical Hound is able to smell books.The people there are also snitching on their neighbos,as can be seen before the firmen burn the house of the old lady.
b) Montag and Faber answer this question by stating that fires look much more impressive at night.

Guy Montag seemed to think that people were discovered because the government or police singled them out as being different, or there would be a call to the firehouse to report someone who had books. They burned at night to a) catch the people at home, and I think, b) just to cause fear and create a spectacle. Fires have more of an impact at night.

SFAIK they knew because people were exchanging books- and some were not so careful as they should have been.
Night because that is when most of the people are in their houses- and the aim was to catch them.
