Planets are made of condensed interstellar matter.

There are particles in space. It's just that the majority of space is empty. That's probably why you heard that there aren't any particles in space. Planets are just collections of those particles bound by gravity.

Who said that there are no particles in space? That is incorrect.

in the most empty space there are estimated to be 1 hydrogen atom per cubic meter. As you say there are planets, stars etc. and even dark matter, which remains a mystery.
