It is dir/p.
By the way, if you use dir/? it will list all of the MS-DOS options available under that command. /? works with all commands.

You can make an environment variable called DIRCMD. Check your variables (Control Panel -> System -> Advanced -> Environment Variables). If one is, there may be a switch called /p. This causes the screen to pause after it gets full. Add it to get that effect.
