Cinderella Castle was inspired by several French castles, most notably Château de Pierrefonds (French wiki site), Château d'Ussé in France, Fontainebleau, Versailles and the chateaux of Chenonceau, Chambord, and Chaumont. Inspiration also came from the classic Walt Disney animated feature Cinderella.
Cinderella Castle was completed in July 1971, after about 18 months of construction, and reaches to a height of 189 feet (57.6 m) tall -- nearly twice the size of Sleeping Beauty Castle at Disneyland in Anaheim, California. However, a method called forced perspective was used to make Cinderella Castle appear even larger than it actually is. As it becomes taller, its proportions get smaller. For example, using this method, the top spire of the Castle is actually close to 1/2 of the size it "appears." Major elements of the Castle were scaled and angled to give the illusion of distance and height, a method frequently used in Disney theme parks around the world.

You've received some great answers about the construction and inspiration for the WDW castle. In addition, the Disney family commissioned an apartment to be built in the castle. Roy Disney, Walt's brother, died before the apartment was completed. It sat there unused for many years, sometimes becoming a maintenance storage room (one enterprising maintenance man set up a makeshift office with a cot once), sometimes housing a mini-call center. Currently, the apartment is being finished and turned into a suite for winners of the Year of a Million Dreams to stay overnight.

Disneyland version
Opened July 17, 1955, the castle is the oldest of all the Disney castles. It reaches a height of 77 feet (23.4696 meters) but to park visitors it seems taller because of the use of forced perspective.
Beginning April 29, 1957, visitors were able to walk through the castle and view several dioramas depicting the story of Sleeping Beauty. The walk-through experience was discontinued in 2001 and it is widely speculated that this was in response to the terrorist attacks of September 11th. Another theory, however, speculates that the closure was necessary because of the inability to accommodate handicapped guests.
In celebration of Disneyland's 50th anniversary, the castle was repainted and 5 turrets were decorated by having various crowns, each representing a decade in Disneyland history[1], placed upon them:
