do some inks work better than others? is food colouring a good alternative?

Any ink will cause ink blots. It rather depends on where and why you want to use ink? If the blots may become damp, then use an insoluable ink such as indian ink. If in sunlight, colour fastness causing fading will be a problem. Also, what type of paper is used - unglazed (like blotting paper) or glazed - will affect the bleed of the ink and cause blurring of the edges of the blots.

India ink is what is typically used to make inkblot prints. You could use food coloring I suppose but food coloring on paper usually doesnt yield deep enough colors.
