Prejudice is one word, it can be good or bad (a prejudice that all blacks are criminals is bad, but a prejudice that dogs foaming at the mouth will attack you is good). If someone is a racist, they are sometimes called "bigots", there is no positive use of the word "bigot"

How about "pigeonhole"? To pigeonhole is to place someone or something (mentally) into specific categories (making assumptions that, to use your example, blondes must automatically be pigeonholed as ****'s.)

You can also have "stereotyping", which you got already. And there's "typecasting" too, which is basically placing a performer or actor in the same role repeatedly.
