The Culinary Institute of America can help you with all you need to know. They have campuses in New York and California. You need to know alot more than just how to cook and if you aren't professionally trained, you probably don't know how to cook well enough. You'll need instruction on how to run a kitchen, how to run the front of the house, etc. There are other schools through out the country. Good luck.
