i'm head of the drama ministry at my church and some women want to go to a nursing home and they asked for me to write a "holiday-ish" skit to do for the seniors.
i dont know what old people like! what could i possibly write about???

The people you are writing for have some age-related disabilities, probably, such as hearing loss and sight loss. Therefore, have the action be very clear, and the language spoken in a clear way, not quiet asides or whispers.
The best way to go is comedy. the people in your audience are often neglected by family and have lost many of their oldest, dearest friends. So give them something to laugh about.
I'm sure I don't have to tell you not to make fun of anything sacred, but you could have a funny take on it. It could portray humour about the angels and shepherds, or about the magi. It could be about children on Christmas morning, their stockings and their gifts. It could be about getting ready for Christmas, cooking the dinner, and so on.
Interjecting a carol or two couldn't hurt.
I've written many, many Christmas skits, so I speak from experience.

Thanksgiving
-The first Thanksgiving meal, and how all the Pilgrims and Indians helped make the feast is a classic.
-Or you can go with the first hunt for the Thanksgiving turkey.
Christmas
- Rudolph the Red Nose Reindeer would be cute.
- T'was the Night Before Christmas. You can be the Narrator.
- The Grinch Who Stole Christmas
- Christmas Without a Santa Claus

Old people like to sing the songs they know. Try to include them.
If you took a nativity skit and made it blundering, like told from the viewpoint of the Innkeeper, how if he'd just let Mary and Joseph stay inside somewhere he could have garnered all that business out there for himself. He could be serving food and drink to the onlookers, but he's inside watching from the window, slightly less wealthy than he could be.
