Manolete was probably the most well known Spanish bullfighter, but he died in 1947. There's another man I found who died in 1922.. He may be your guy?

Granero Valls, Manuel b. April 4, 1902 d. May 7, 1922
Bullfighter. He was born in Valencia, Comunidad Valenciana. He studied music, becoming a good violinist, but left music for the bullfighting. He debuted in September 28 in 1920, in La Maestranza de Sevilla along with Rafael "El Gallo." He got a big success and during 1921, he made 91 "corridas." Soon, he become a legend of the bullfighting. He was considered a successor of Joselito, and he created the move "Pase de la Firma." Sadly, on May 7, 1922, Valls was gored to death in a bullfight .

Here's the link to the info that I found:

Are you sure he DIED in 1923 and not that he was born in 1923 because otherwise that is a long time ago and nobody remembers any famous bullfighter who died around that time. And I am in Spain, just in case.

I know of a Spanish bullfighter named "Manolete" (pronounced man-oh-lay-tay) who was enormously popular in the hispanic world, who died from being gored in the bullring during my lifetime. But that would be more recent than the 1923 date you suggest.
