Sweet pototoes, no, make that pumpkin pie, no, maybe the turkey...
It is too hard to narrow it down to one thing. Thanksgiving has a very structured menu (turkey, dressing, mashed potatoes, cranberry sauce, sweet potatoes, pumpkin pie). I can't imagine not having those.
When we were overseas for 3 years, it was really hard finding all the parts for Thanksgiving, but we always managed somehow. One year, we had to cut up a huge Queensland blue pumpkin and make the pie from scratch without a recipe. Not easy.

The turkey. It is the symbol of thanksgiving basically, so you can't really have thanksgiving without it.

I started to answer turkey, but the real truth is that, as long as my wife is there across from me, even if we were sitting on the bare floor dining on cold Pop Tarts and orange juice, it would be Thanksgiving.
