For a really unique experience, try the Caldera de Taburiente volcano crater at La Palma island in the Canaries. You can also hike all over the island. Beautiful scenery and great views. Plenty of "casas rurales" you can stay in.

If you are staying on mainland Spain, I recommend you remain in Andalucia, where the weather in winter is more clement than in the north.
