I knew of a woman who got one finished in one day, but she had been knitting for years and was REALLY fast.

Depends on the difficulty of the stitch and if you are changing colors throughout or if it is a simple sweater. Some sweaters these days with the thick yarns out there and knitting from side to side instead of up and down can be done in a few days if you are a fairly experienced knitter...a newbie could take weeks or months for the same sweater...so experience level, type and weight of yarn and pattern are all factors in the time it will take. I average 4-6 weeks with worsted weight yarn and staying on it in most all my free time with a simple long sleeved pattern without a bunch of cable or color changes in it.

It usually takes me about 6 weeks to finish an adult sweater. I'm an average speed knitter and do it in my spare time. It also depends on how fine the yarn is and size of needles.

Wth super bulky yarn and thick needles--you could be finished in a weekend. Then allow a few days for blocking and drying.
