If you are interested in politics, you might stop in Salem, Oregon and Olympia, Washington to see both state capitals. Neither is far from the highway, and I think both give free tours. Also in Salem, OR is a great historical carasoul at Riverview Park.
You might also stop in Portland, OR. They have a great Japanese Garden that I would highly recommend and their downtown area is kind of cute.

There is also a Mount St. Helen's visitor center about 5 miles east of I-5 on State Route 504. You probably won't be able to see the volcano unless it's a clear day, but there is quite a bit of information and a great documentary at this center.

I think that about covers it...unless you are willing to drive up the coast on 101. That's the scenic route.

You're looking at a 17hr drive full of lots of NOTHING. Ugh. When I went from NW Washington to San Diego a few years back... that was the one day that made me really question WHY I decided to DRIVE (I drove from Portland to SF, straight through... 13hrs). LOL I wanted to check out the Redwoods, but they're a ways off I-5. About the only nice thing right off I-5 is Shasta Lake. Other than that... there's a couple of nice rest stops. :) I've always wanted to take 101... I hear it's beautiful... but it's a lot longer drive. Have fun!

the following is a information flash. California is going to have a huge quake....I mean a wide one. i recognize I stay the following and characteristic for 15 yrs. I lived contained in the bay section and San Francisco is gorgeous a lot extra so then Seattle. in case you want rain 220 days of the three hundred and sixty 5 days flow to Seattle, if not flow to SFO. yet bear in mind San Fran is finished of complications, crime, homeless people, one way streets, queers everywhere you flow and hookers downtown on the line corners. i'm so happy i do not stay contained in the Bay section anymore. i do not bypass over the dirt in any respect. San Diego, Orange County, Newport coastline, Huntington coastline, l. a. Jolla, Del Mar....those are the places to stay in California to be honest. yet out of both you should settle on on from I nonetheless might want to p.c.. SFO because the suburbs are magnificent. Like Walnut Creek, Danville, Orinda, Lafayette, team spirit and Sausalito.

Honestly, there isn't much to do off I-5 - If you take 101 up the Coast, it'll take you a bit longer, but you'll find plenty - Animal Parks, great beaches (Lots of seals), Giant Redwoods, the list goes on & on!

You can pick your nose while driving...that's what I usually do to keep me entertained on a long drive.
I also keep a big bag of sunflower seeds , In case I run out of bugers to eat.
