Do you mean a childrens storybook ethnic character? Fuzzy thinking! How about 'Mowgli'? or is Rudyard Kipling too non PC? Pinnochio - Italian? There are many, varied and rich childrens stories from other cultures but they do not necessarily contain characters with which we are familiar. Let the ethnic/afro-caribbean teacher choose their own favourite character and if it is not one the children recognise then what a wonderful opportunity for the teacher to tell them the story!

It would be nice if you specified which ethnicities you were looking for. Mulan and Aladdin come to first to mind as one with which most would be familiar. Others are more obscure, but you could always introduce ethnic characters as well - check in Wikipedia's List of Fairytales.
