Yikes, there is not much in between the 2.
You could meet in Yuma and have dinner at the Chateau Basque restaurant (best family style food ever). Stay at the Shilo Inn.
San Diego has tons of stuff to do and places to stay too.
But in between the two... I don't know. I used to live in Jacumba which is right about in the middle but no way would I recommend visiting there to anyone... :-(

If you drive 2.5 hours from LA you will get to Banning or Palm Springs if you are lucky and depending on where in LA you live. If she drives 2.5 hours she may get to Quartzite AZ. Indio or Palm Springs would offer the most to do, but Desert Center and the eastern edge of Joshua Tree National Monument are about half way.

Blythe is about half way, but it is just a small town, nothing special there to do. FYI - Yuma is far south of both Tempe & LA so kinda out of the way for both of you, and not a large town with much to do either. Blythe should be a direct shot on the 60.

I would say that your best bet is either Needles or Barstow. I'm not sure about the exact distance or travel time to these locations but they both lie on the AZ-CA border. I've been to both of them on separate trips and there really isn't much to do in either location except fill your gas tank and grab a bite. Why not try somewhere like Las Vegas? Vegas is fun, there's lots to do, and it would satisfy your "between AZ and CA" criteria.

el centro is kind of inbetween - i don't think it's only 2 1/2 for either of you though... i always went phoenix to sd... there's a huge outlet mall there... lake havasu is also on the boarder - more north than yuma.
as for 2 1/2 hours, i don't know that even if you met 1/2way exactly you would only travel that long - the fastest i ever made it phoenix to sd was 5 1/2 and i was a speed demon that day.
here's an interactive map of arizona:http://www.americansouthwest.net/arizona/map.html
and california:http://www.americansouthwest.net/california/map.html
good luck, be safe and remember ADOT is full of schmucks.
