If she likes coffee, how about a Starbucks card? If she likes reading books, how about a Barnes and Noble or amazon.com gift card? One of those gift baskets at Bath and Body Works?

Wow I have a co-worker the exact same way. And she is very sensitive about not being married or having kids. For me I know that likes to cook and its a stress relieving mechanism so last Christmas I bought her some cookware and a cookbook. It was one of those creative things you can make books. Try to figure out what makes her happy and get something in that area.
