That would depend on what your preferences are... such as, mountains, cabin, snow (Tahoe)... or sandy beach, sunshine, surfing (San Diego, or along the coast anywhere north of there)... city lights, night life, touristy (San Francisco)... recreational, swimming, boating, skiing (Redding, Mt. Shasta or Mt. Lassen)
Any place you go might help to set the mood, but you have to bring romance with you ;) So where ever you choose, bring some candles, maybe some chocolate syrup & whipped cream, or whatever you concider to be romantic. :D

Yosemite, the Redwood forests, Giant Sequoia Nat'l Park (my all time fav.)
I used to live in Running Springs (San Bernadino Mts.) there is a place up there called The Enchanted Forest (a must see) It around Blue Jay-Lake Arrowhead area.

Healdsburg in Sonoma County. You're surrounded by gorgeous countryside, beautiful vineyards, other people relaxing, you've got beautiful lakes & you're near the Pacific. How perfect is that?
Or... I've heard that LaJolla is THE place to get away to. My parents used to love going there for romantic weekends. Check it out. Have fun!

Its up too what kind of weekend are you looking for (like stated already) we have all elements here in CA. snow, mountains, beach, dessert, wine country, and so on so on.
being the westcoastking that I am here's a few for ya;
start with ocean towns, Monterrey is a great start and or Carmel its neighbor south really good romantic spots here.
way north is Mendocino co. and fort brag small Little towns with lots of fog and beach and great eating and hotels fog horns throughout the nite kind cool. like a movie. :)
Wine country here is great Na pa valley is pound for pound the best but don't rule out El Dorado Co. and others as they are great wine and dine spots too!
Tahoe is always good tons of stuff to do Plus (real) casinos bonus! they have everything from hot air balloons to hiking to 4x4 tours and of course snow season is damn near here so yet another bonus!
Tons of great spot in SO*CAL as well but most are packed with people although I do like La Jolla but again packed with people.

Try the Big Sur coast. There is a place Ventana Inn that is unbelievable and has a room with an outdoor shower.
