You don't wait a couple hours (have mercy!) but you do wait long enough for the juices to settle (as you would a baked turkey). If you cut too soon all the juices will leak out. You really should know what you're doing to do this though. My BIL is a fire chief and every year there's that adventurous couple who almost (or does) set their home on fire trying this. The other poster is right, it absolutely has to be thawed or fresh to begin with. Another important thing is that you must fry it far, far away from your house. Deep frying in the garage is a no-no. Make sure you follow all safety precautions.

I love turkey deep fried and out of the oven! Oh God, you got me drooling! Not against Thanksgiving tradition, not at all! You're having turkey anyway you serve it up!

If you're still having turkey,it's fine,not going against anything. We just bought a turkey fryer,gonna try it for the first time this year. I hope it's as good as everyone says! Have a wonderful holiday and enjoy your turkey no matter how you cook it!

It definitely isn't the same as the stuffed turkey cooked in the oven for a few hours....one year we made both...and I don't know if my dad and step-mom didn't do it right or not...but it just doesn't taste the same..of course, I'm kinda partial to the original way, since I make it myself..lol...and I don't have anything against my dad either..lol
