Some of the earliest influences were folk songs and ballads from the British Isles, such as Barbara Allen. Themes of these ballads included love, betrayal, death, and even the supernatural, just about all of which can also be found in the country & western genre.
As time went on, people adapted stories of theri own to to the ballad tradition, and the result evolved through the years into such streams as folk, folk-rock, rockabilly, and of course mainstream C & W.
Often the songs tell a story, such as Tom Dooley (it was actually Dula, but that's another topic for another time), and frequently deal with the love of a good woman (or man), or the misery of loving a bad man (or woman). Country music has always dealt pretty frankly with issues such as infidelity, and has also provided a rich store of spiritual songs as well. Again, this is reflective of the kind of rough and tumble life led by our ancestors, espcially in areas considered to be the backwoods, where death could come at any time and in myriad different forms. There is a vein of living while you can, and at the same time a sense of what awaits following death.
All in all, it's a rich history, and well worth investigating.
