Well, maybe you could offer to work for a probation period. Explain you are positive you could do the work and are very enthusiastic and you're willing to try a probation. Tell them if they aren't happy with your work during that period, they can let you go and it won't be any big deal. They'd probably be happier with a solution like that, because to fire someone, you have to have a pretty big reason and they don't want to get themselves tied up in an unfit employee. Good Luck!

How do you know you can do the work? Is this your opinion? If you've never done the work before you actually do not know how capable you are. You have nothing but your word to convince them. No referrals. You could offer to demonstrate for them. Maybe they would let you work a shift so they can see how you do. But in the food industry experience is key. Experience is proof.

Offer to work for a couple of hours to prove to them that you can do the job, or ask to work one shift and then let them decide.

Work to your fullest potential without asking for assistance if you can do it alone. Don't show them that you need them around. If they know they can count on you to get the job done while they're away, that's reason enough for them.

Offer to work one day doing that work for no pay and if he is satisfied he can then pay you, if not then he doesnt owe you anything for that day. It will give you a chance to prove yourself at no expense to him.
