The walls and ceiling of a self-cleaning oven are made of non-stick material, so food cannot stick to it. The oven is not actually self-cleaning. If you check the instructions they will tell you to run the oven on full power for a while from time to time. This will burn up any food deposits, leaving a black sooty residue on the floor of the oven, that you can wipe away with a cloth.
Normal cooking is done at much lower temperatures than needed for the cleaning cycle.

Self-cleaning ovens clean themselves by basically burning off whatever was spilled. This is done through very high heat over an extended period of time. Baking and broiling use lower heat than the "self-clean" setting provides.

Everyone here is on the money. They clean by basically burning and residue in your oven. Note to those of us getting ready for holiday baking. Don't use the self cleaning feature right before the holidays. If your self cleaning oven is going to break down it usually will do it right after a cleaning.

They clean themselves by using very high heat to turn baked on grease into an ash which is easily removed. It differs from broiling in that the cleaning feature takes several hours, whereas cooking takes considerably less time.

generally self-cleaning ovens have a 3 hour cycle of over 800 degree heat to burn the stuff off of the inside of your oven,
if you tried to bake or broil (550 degrees) you would burn the chips right out of your cookies, and leave your T-bone charred rare

to clean a self cleaning oven, you have to put it on( empty ),at a very high temprature, i still clean mine though,
