For ex. Is it better go have www.store.com and www.store.es for local search engines? Or will Google still find the .com in Google.es ? Also, would it be better to do a 301 webredirect from the .es domain to the .com domain?

You should have only one domain and it should reflect the target geographical area. However, you should consider adding your business to Google Local & Yahoo Local Search.

It depends where your market is. If for example your market was in the US and Spain then you should have yourdomain.com in US English located on a US server and yourdomain.es in Spanish located on a server in Spain.

If however you are after the Hispanic market in North America then translate your site into Spanish and put it on the same domain yourdomain.com hosted in the US.

Dont forget to put the correct character encoding and language tags in the header of each page http://www.seo-blog.com/character-encoding.php
