Noah sent out a dove from the ark, and when the waters had receded to the point where trees could grow again, a dove returned with an olive branch. When the flood of Noahs day covered the whole earth. Noah and his family were in the ark for about a year. He opened the window and kept letting a dove go to see if there was dry ground..One day the bird came back with an olive leaf in its beak.
Olive trees are used as fruitfulness,beauty, and dignity.
The branches were used in the Festival of Booths
also used as God's annointed ones and witnesses.

I believe it signifies peace because back in the days of Noah and his ark, he released the dove to see if there was dry land anywhere and the dove came back with an olive branch meaning there was life out there and God I guess was not "mad" anymore and decided to end the flood. It originates in the Bible.
