I believe it is because as we age the elastin protien fibers in the connective tissue breakdown and lose thier elasticity. Is this correct?

Yes. You are right. As the cells grow older, the repair mechanism is also hindered, so the cells become stiffer.

tissues are just a bunch of cells that evetually die so you better reproduce before it is to late

I don't know, but I know an organ that gets looser as it ages.
