trying to play this game but having problems at the 'restrain' customers in the hotel part. doesnt matter what i press it doesnt help. can you help me please?

Though the whole thing seems random to many people at first (this is one of the more common complaints about the game). But there are actually subtle cues and strict time limits on what you should do and when. Look closely at how many arms the person lifts up:
None (they're hanging down) - 'stop' them!
One (in a fist) - give 'em a 'stern yell'.
Both (one, then the other) - 'steady' them.
You have to also pay close attention to when the touch-buttons are flashing. Touch them ONLY at that time. If you touch them too soon or late, it will mess everything up (this sounds like the problem you're having).
Pay close attention to the gestures and the flashes and you should do fine!
