I live in Dallas and we are trying to go on a small vacation in January, but also inexpensive. I mean really inexpensive. We would love to go somewhere with a cooler climate, but I would love any suggestions. Remember inexpensive.

First off, plan to drive. It depends on what you like and how long you want to stay gone. You could do a loop tour if you don't mind the windshield time. Stay away from fast food (too expensive) and eat out of the ice chest. This time of year motel costs are low. Stay away from hotels in large cities and stay in small towns. Consider New Mexico which is unlike southern Arizona. The entire state of NM is above 3000' and ABQ is about the same elevation as Denver. If you want to go north, consider the Black Hills of SD but be prepared for a blizzard.

I'd recommend somewhere like Upstate New York or New England. There are many small towns with beds and breakfasts that are resonably priced and these areas are absolutely beautiful in the winter.

Inexpensive - means how expensive.
If you want for very less - sit at home and enjoy being with family.
Want to go abroad, enjoy and spend less - try going out to India - in Goa - cheap and the best - and cool weather in Jan. try it out

I would come to Minnesota to see the snow. Very cheap to fly and lots of fun.
