Just tell her your leaving,
"I am leaving in ... weeks, i am looking/found a new job with a better financial situation, unfortunately I cant afford to keep living with the pay here, sorry but i prefer to be honest with you. I am sad to think that we will not be working together but i would really appreciate if you can be a rteference for me in the future/for my next job."

It is customary to give a two week notice when you leave a job. Do not lie about why you want to leave. You want to be able to get a reference letter from your present manager. As a part time employee you should not have a problem with the manager understanding why you want to better your position. If you have done a good job, she/he might even offer full time and more money. Make a good impression and write a letter giving your manager your two week notice..Be forthright and you will find it very much to your advantage on your next job. I hope you have something else lined up before you actually quit your present job.

The good news is that she will probably sound very positive. You should tell her you have received a great opportunity for a position with some serious future. Tell her you plan on honoring your two weeks' notice.
It's really better if you have a job in line. That way it doesn't sound like a lie... and what are you going to do with no income when you are looking? That's why you work Part Time!!

Mmm, I've been there. I have used the I am going back to school excuse or I have actually moved. The problem with using these excuses though is that if you put your boss as a reference than someone is going to call her and tell her you are looking for another job. Honestly, I would sit down with her and let her know that you need to find another job where you are making more money... she might even suprise you and offer you more money. Don't worry if she get upset, if she does-- tell her you need to do what is best for you. I hate it when people try to tell me what to do or become angry with my life choices. She's not living your life, she has no right to become anger with you. You need to do what is best for yourself. Be calm and assertive, but also make sure you have something else lined up to avoid awkwardness.

be truthful, and make sure you have another job, little pay is better than no pay at all. You can not pay your bills on good intention. A job change is great everyone should consider the improvement to ones life. Keep it simple and remember to thank your boss for the opportunities that you have had in your present job and that the experience gained will benefit you in your new endeavours.

Tell her that you would like a change, and as a result have decided to move on. Let her know that you've had a good time working for her and thank her for the experience/guidance.
Ask if she could pls write you up a reference to aid your transition. If she's a good manager who cares then you'll have no problem with her helping you out.
If you lie and she finds out, THEN she'll be really upset.
