Pouring 20+yds. friday and need some tips so I know if the guy I hired is going to get the finish I want. Any would be helpfull.

Is it already entirely indoors, then rain and perhaps cold will not be an issue, otherwise they may be. You may want some retardant in it if the finish you want is time consuming. There are also some awesome super-finishing machines, though this may be too small of a project to use one:

When done, keeping it moist is important, I have seen some spray (ever so lightly) a water seal over it to keep the moisture form evaporating too quickly, as well as laying sheet plastic over it for the first full day.

It needs a good hard trowel finish. This means that after the concrete has been places and leveled, and when it has started to set up, they have to trowel it smooth. Lot's of work to get a good hard trowel finish.
