To make the dialogue more colorful. The point of Imagery is to inspire images in the audience's mind. This is especially important in theatre, to build a sense of context greater than the limits of the stage and costumes.

Otherwise, if we just wanted to read a straight story, we could read plain text, telling us the facts and events. That is not for entertainment and creative purposes, as are theatre and art.

Also, phrases such as Juliet is the sun, are shorter and make for better delivery on stage that a lot of extra verbiage. Such poetry plays well in theatre.

People have a need to share stories. Every artistic expression has its author and its audience. So the point of theatre is to bring that message to life.

because that is what separates a journalistic writing from a work of art.

It is more descriptive and brings the reader into the story. It sets a tone and draws on the readers other feelings and experiences to make the description mean more than just the words used to describe the event.
