Well the greatest has to be Steve Vai. Unbelievable man. Others would be Joe satriani, Eric Johnson, Yngwei Malmsteen, and if you want a really weird and cool sound, try Ron Thal.
Other than the standards (Clapton, Hendrix etc.) those guys are unbelievably technically sound.
