I would probably have to say go for it!!! Your soccer coach would be so proud that you would toast to him, of course I would be!! You could just say, To my coach the most wonderful man in the world. He taught me so many things, and I have done little for him in return. So, to Coach So and So. Cheers!!!! You could even put a joke in here or there. All you have to do is be yourself, use your imagination, and remember all the good things that that person has done to you for you and for those around you. That's all their is to it. Just remember be yourself.

Start with an intro: say who the toast is about. Like, "this is to recognize/honor/whatever __________."
Continue with how you know the person: tell about what the occasion is, or why the person is being honored. I know if it's in class, it's not like you're at a banquet or something, but just use your imagination.
I personally like a little humor or contrast: say something to poke a little fun at the person, or to say, it wasn't always easy working with the person, or sometimes I wanted to kick him in the kneecaps but I was too tired from running windsprints...fill in your own experience. Usually, you toast people who helped you through a tough situation, or people that you knew closely who weren't perfect, but you loved them anyway. Quirks and faults make people interesting, and people love hearing them in toasts. But be respectful--it's not a roast and you're being graded on this, so keep it NICE. Nice is important.
Finish: Here's to... something. More of the same, or thanks for the help, and I'll remember you now that I'm moving on...something to finish off the toast. If the coach had a catchphrase, you can repeat it if it makes sense at the end of the toast. It's OK to be a little cheezy--thanks for helping me...reach my goals. You can make it funny, or make a pun, or be sincere.

Say what you believe is good and honorable about this man, what he has accomplished in life, and if you have a close enough relationship, you might think of something funny as a "roast" joke. I'm not a good comedian personally, so I stick with heartfelt thoughts.
