The earlier the better (cheaper).
The tourist season in Greece kicks off straight after Easter (the Greek Orthodox Easter that is) and escalates from there to a peak at late July through August, when most of Italy descends onto the islands and a lot of the mainland.
April is beautiful in Greece as many flowers are fresh and in bloom and it is not yet too hot to enjoy being outside all day.

Second fortnight of April, after the Orthodox Easter, when hotels have opened but there are not many tourists around. At this time everything has started working for the summer season, the nature is at its best, people are still warming up and the little number of foreign visitors allows a very good service and very good prices...
Avoid July by all means! It's hot, it's noisy, it's crowded and very expensive!

We advise June or September as the best combination of weather, prices and other people.
You do want facilities to be open and that takes a certain number of people.
July and August are not that much more expensive except for accommodation. There are many cool, uncrowded and economical places to go during that high season.

Flights are cheaper in April and May. But once in Greece most things are inexpensive unless you're looking for first class. Try looking for alternates once you are there. If you are going to Kos for example, stay at Kalymnos(much cheaper and still very nice).
