Well, since you limited me to the 80's until the present...

Amadeus - beautifully filmed
Dangerous Liasons - Glen Close and Michelle Pfeiffer, what else do you need?
Crash - makes you think
Field of Dreams - the best film to come out that year, who still really watches Driving Miss Daisy?
Silence of the Lambs - Hopkins and Foster were perfect together
The Commitments - just plain funny
Enchanted April - I watch it every April
Saving Grace - little seen, underrated, hilarious.
All those 80's teen movies like 16 Candles, Breakfast Club, Pretty in Pink, Better Off Dead, Say Anything
Blue Velvet - David Lynch at his best

Shawshank Redemption-an excellent portrayal of prison life.

Forest Gump-very creative, and I enjoyed how he was involved in historic events.

American Beauty-great acting, unique story.

Fast Times at Ridgemont High-fast paced and funny.

Pay it Forward-it was refreshing to see a movie about something so good for the soul.

For my epic male battles, LOTR trilogy, I absolutely love Pride and Prejudice and the Princess Bride for my romantic side, and the combo Saving Private Ryan/Band of Brothers for my war moviefest. For children's movie, The Secret of Nihm, and for my visual trippiness, Mirrormask. For anime, Spirited Away, and for monster movies, Dracula with Gary Oldman. And the ultimate cryfest movie, why do I watch it a million times, Waking the Dead.

The Usual Suspects
because it is suspenseful, smart, keeps you on the edge of your seat, and is just good all around

I also like the fist 2 godfather because the acting is amazing, it isn't cheesy, and the character devolpment is really good but that was in the 70s

Star Wars: The Empire Strikes Back. It depicts a desperate situation and shows how people can rise above themselves to accomplish heroic things.
