You can do what you like provided the resulting car is roadworthy and your insurance company knows about the alterations.
When you come to sell it you might be in trouble. You can't describe it as a Rolls Royce - you'd have to say it was a hybrid car with a Rolls Royce engine.

Why not? There was a guy who slapped a RR grill on a home built car with a giant engine in it (he claimed it was a merlin, turned out to be from a tank). RR took him to court and got him to remove the grill, but that was only 'cause it wasn't their car. If you start out with one of theirs they can;t do the same to you. There was a rumour they went around buying up bangers in the '80's and '90's so you'd never see a scruffy one on the road, don't know how true that is.
