I want to make homemade pumpkin bread for Thanksgiving, but the only recipe I have calls for mincemeat or something nasty like that which I don't want to use. If you have one please leave it in your answer or email it to me. Thanks in advance :)

•3 1/2 cups all-purpose flour
•2 tsp. baking soda
•1 1/2 tsp. salt
•2 tsp. cinnamon
•2 tsp. nutmeg
•3 cups sugar
•4 eggs, beaten
•2 cups of fresh pumpkin --> 16 ounces if using canned pumpkin
•2/3 cup water --> if pumpkin is canned
•1/2 cup water --> if pumpkin is fresh or frozen
•1 cup vegetable oil •1 cup chopped pecans

Preheat oven to 350 F. Combine flour, soda, salt, cinnamon, nutmeg and sugar in large mixing bowl. Add eggs, water, oil and pumpkin. Stir until blended. Add nuts. Mix well. Pour into two 9x5" loaf pans. Bake 1 hour. Cool slightly and take out of pans to let cool on a rack. This tastes best if you wrap, refrigerate and wait a day to eat it. It keeps well in the refrigerator and can be frozen.

Whenever we carve up a pumpkin for Halloween I'm always reluctant to throw the pieces out. That's good squash! We salvage the seeds and roast them for a tasty snack, put what to do with the pieces left over from carving out noses, eyes, and ghoulish smiles? This year we decided to make pumpkin bread and found an easy, straightforward recipe in the classic Fannie Farmer Cookbook. The recipe calls for a cup of pumpkin purée which you can either get from a can, or make yourself by steaming or roasting the pumpkin pieces, removing the skins, and blending in a food processor.

I think if you use pumpkin purée from a can you'll get a stronger pumpkin flavor. We use baked and steamed Halloween pumpkin, which is essentially squash and doesn't have as strong of a pumpkin flavor. The spices make this quick bread quite tasty, and the squash helps the loaf stay deliciously moist. It's a lot like a pumpkin version of banana bread. Very yummy and very easy to make.

1 1/2 cups (210g) flour
1/2 teaspoon of salt
1 cup (200 g) sugar
1 teaspoon baking soda
1 cup (1/4 L) pumpkin purée
1/2 cup (1 dL) olive oil
2 eggs, beaten
1/4 cup water
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon allspice
1/2 cup (1 dL) chopped walnuts

(metric measurements in parentheses)

Preheat oven to 350°F (180°C). Sift together the flour, salt, sugar, and baking soda. Mix the pumpkin, oil, eggs, 1/4 cup of water, and spices together, then combine with the dry ingredients, but do not mix too thoroughly. Stir in the nuts. Pour into a well-buttered 9x5x3 inch loaf pan. Bake 50-60 minutes until a straw poked in the very center of the loaf comes out clean. Turn out of the pan and let cool on a rack.

Prep: 20 minutes
Bake: large loaves 50 to 60 minutes; mini loaves for 40 minutes

Ingredients
3-1/2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground nutmeg
3 teaspoons ground cinnamon
1 teaspoon salt
3 cups sugar
1 cup vegetable oil
2/3 cup water
4 eggs, well beaten
1 can (16 ounces) solid-pack pumpkin puree (not pie filling)
1 teaspoon vanilla
1 cup coarsely chopped pecans
1 cup raisins

Directions
1. Heat oven to 350 degrees F. Grease three 8- or 9-inch loaf pans. For individual gifts, grease 6 to 8 mini-loaf pans.
2. Sift together flour, baking soda, nutmeg, cinnamon and salt into medium-size bowl. Mix sugar, oil, and water in large bowl. Stir in dry ingredients. Add eggs, pumpkin and vanilla, mixing to combine; do not overbeat. Fold in nuts and raisins. Pour batter into prepared pans, dividing equally.
3. Bake in 350 degree F oven 50 to 60 minutes for large loaves or until wooden pick inserted in center comes out clean. Bake mini loaves for 40 minutes. Makes 3 (8- or 9-inch) loaf pans or 6 to 8 mini loaf pans.

Here are my banana bread recipes: BANANA BREAD 2 CUPS FLOUR 1 TEASPOON BAKING SODA 1 TEASPOON SALT 1 CUP MASHED BANANAS (APPROX 2 ½ MED) ½ CUP SHORTENING 1 CUP SUGAR 2 EGGS PLACE 1 TABLESPOON VINEGAR IN MEASURING CUP AND ADD ENOUGH MILK TO MAKE ½ CUP MIX ALL INGREDIENTS TOGETHER GREASE WITH SHORTENING, THEN FLOUR 1 LOAF PAN POUR INGREDIENTS INTO LOAF PAN. DROP PAN ON COUNTER SEVERAL TIMES TO RELEASE AIR BUBBLES BAKE @ 325 DEGREES APPROX 1 HOUR, UNTIL TOOTHPICK INSERTED IN CENTER COMES OUT CLEAN COOL 10 MINUTES IN PAN REMOVE FROM PAN AND CONTINUE COOLING ON RACK **CAN ADD NUTS IF DESIRED **************************************... Banana Bread 2 eggs 1 cup flour 1/4 cup sugar 1 tsp baking powder 1 tsp baking soda 3 bananas Bake 325 for 25 min.
