JAMBALAYA´s Carpenters?

English is not my native speaking language.
I have this CD by the 'CARPENTERS" and I love this song "Jambalaya". But I don´t understand the meaning of all that "slang". Can you help me?

Jambalaya is a Creole dish (think New Orleans) made of rice that has been cooked with shrimp, oysters, ham, or chicken and seasoned with spices and herbs.

The songs just talks about fishing, cooking and having fun together...Hope that helps!
