Well, Paris is called "The City of Lights", so maybe you can use a lot of little, twinking lights around the perimeter of the area where the dance is being held. Christmas decorations are on sale now, so you should have no problem finding tons of lights. Also, fake snow, or snow-like confettii could be used to add the 'winter' effect. Blue, white and silver would be a good color combination. And if it's possible, maybe a small reproduction of the Eiffel Tower or have someone paint the Paris skyline in the background. If that's too much, just stick with the snow, lights and colors.
