The expression derives from umble pie, which was a pie filled with liver, heart and other offal, especially of cow but often deer. These parts were known as umbles, and since they were considered inferior food, in medieval times the pie was often served to lower-class people.

Although "umbles" and the modern word "humble" are etymologically unrelated, each word has appeared both with and without the initial "h" after the Middle Ages until the 19th century. The similarity of the two words was probably a significant factor in the evolution of "eat humble pie" as an idiom.

here you go i don't know witch one you want so i gave you the dessert and dinner one

1 unbaked pie shell, fit into a pie pan (made from scratch or purchased)
Filling
3 macintosh apples
1 (12 ounce) package fresh cranberries
1 cup light brown sugar
Topping
3/4 cup walnuts
1/4 cup brown sugar
1/4 cup flour
3 tablespoons butter, softened, cut into bits
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon salt


1. Preheat oven to 425 degrees. Peel, core and dice apples, then mix with the cranberries and brown sugar. Place into pie shell. Place the walnuts in a processor and puls for 5 seconds. Add the remaining ingredients and pluse until blended but still crumbly. (You can also chop the nuts by hand with the back of a large spoon and blend them with the rest of the ingredients.)
2. Spoon topping over the pie and bake for 20 minutes at 425 degrees, then turn oven down to 350 degrees and bake for 30 minutes more. Cover top with foil to prevent from darkening to much.


Humble Pie

This was a favorite of my children when they were young. It lends itself to many changes & variations.


List of Ingredients


* 1 to 2 lbs. ground meat (beef, or half turkey; for vegetable dish use meat flavored soy.)
* Assorted seasonings as per your family's preference.
* seasoned salt or Tony Chachere's
* lemon pepper
* onion powder
* 1/4 to 1/2 tsp tabasco sauce
* 1 to 2 tsp worcestershire sauce
* 4 to 8 servings of mashed potatoes as per pkg direction (4 for 1 lb, & 8 for 2 lbs of meat; more or less as your family likes)
* 1 to 2 cups grated cheese, or slices of velveta ( I don't use american slices, they tend to burn)
* can of ranch style or chili beans (optional)
* can of whole kernel corn (optional)



Instructions

1. Add seasonings as you scramble & brown the meat till it is no longer pink, then drain well if needed.
2. In an oven safe dish, either mix meat & potatoes together & top with cheese; or layer the meat, potatoes, & cheese.
3. Top the mixture with cheese & heat in medium oven on bake till cheese is melted.
4. If you choose to use either beans or corn you can make a layer of them or mix together with meat & potatoes prior to adding the topping of cheese.



Final Comments

I appologise for the imprecise measurements, but I don't measure when I cook something like this; just shake a general light covering. If your family likes garlic, bell peppers, or chopped onion that can be added to the meat as it cooks. Adding the corn or beans often makes it a slightly "soupy" mixture, but the taste is very good.
