I've heard human flesh is grey. I think it would depend which part of the body's inside you were looking at. Muscles are red, fat is yellowish-white, bones are white. Organs are kind of pinkish.

Actually, things are pretty grey when you remove the blood. The gall bladder, though, that's green. I think the large intestine is green, too. Everything else is this dull brownish grey color.
