They do that in case your not bright enough to realize what the loud sirens and bright lights behind you are for.
They hope you can atleast read, and then realize that the vehicle behind you is transporting someone in need of emergency medical care.
The word "AMBULANCE" in your rear view mirror is your last warning before they ram you off the road!

Well, if you are driving in front of an ambulance, and you look in your rear-view mirror, the word will read correctly! Have you ever noticed that everything you see in the mirror is backwards? Say you look in the mirror and hold up your right hand...your reflection is holding up its left hand! Same goes for text. If you hold a word up to a mirror, it will be backwards....and if you write a word backwards and hold it up tp a mirror, it will read forwards! It could be like that on ambulances so that people who are hard of hearing or have their sound system on 100, will notice who is behind them so that they can move out of the way if they need to...

It's written backwards so when you look in your rear-view mirror or side mirrors you can read the word ambulance. That way you know to pull over to the right to let them pass.

The are two interesting things about this.
This first is the most obvious of course, so that it looks like normal writing when you read it in the rearview mirror.
The second is that it is also done in other languages in other places around the world.
For example, all through the Arabic-speaking world, one of the few places that you can see Arabic written backwards is on the front of an ambulance.

The backwards letters if you see them in your rear view mirror magically change so that you can read AMBULANCE. The purpose is to make you pull over as soon as you see them with lights blazing.

So when you see it in your rear view mirror, you can see it's an ambulance (although the flashing lights and blaring klaxon should be a tip off as well)
