The one with 'three' winners is the Intertoto Cup, I'm afraid. It's for teams who have missed out on Champions' League and UEFA Cup places and still want to play in Europe. They then have to apply to UEFA and wait for UEFA's approval, as there are limited places. The eventual winners of the Intertoto Cup get to play in the UEFA Cup. As of this season the Intertoto Cup has eleven, instead of three winners.
I think the Euro tournament he's asking about is the one where all the European nations come together, like a sort of World Cup. This is held once every four years and teams play qualifying matches to see who will qualify for the main tournament. The next one will be held in Austria and Switzerland in 2008.
The following is the answer I gave to another question a while ago about the Champions League and the UEFA Cup:
Champions League is for the top teams of a domestic league to participate in. Depending on the country's coefficent the league might get a maximum of up to 4 slots. Currently the countries with 4 slots are Spain, England and Italy. Next are France, Germany and Portugal with three slots, and so on.
UEFA cup is for the teams finishing directly outside the CL spots in the league and also the winners of the domestic cup. This comes from the old Cup Winners' Cup, with was absorbed into the UEFA Cup in 1999. If there is an additional League Cup (like in England) then the winners of that will go into the UEFA Cup too.
Again, coefficents determines the number of UEFA Cup slots each country gets. Most of the top leagues have three, but Holland and Greece each have four, which they allocate to the cup holders and the teams finishing below the CL spots, i.e. 3rd, 4th and 5th. (They both have two CL spots).
Example:
England - Top 4 qualifies for CL. 5th plus FA Cup winner plus League Cup winner qualifies for UEFA Cup. If either cup winner qualifies for the CL then 6th in the league gets the UEFA slot. If both cup winners make the CL then 7th place gets the UEFA Cup spot as well.
Spain - Top 4 qualifies for CL. 5th and 6th plus cup winner makes the UEFA cup. Same rule applies if cup winners makes the CL

The UEFA Champions League is UEFA's most prestigious club competition. It was originally created as the European Champion Clubs' Cup for the 1955/56 season, before its format and name were changed in 1992. Real Madrid CF have been the most successful side in the UEFA Champions League, winning the competition three times. They are also the most successful side overall with nine triumphs, followed by six for AC Milan and five for 2005 champions Liverpool FC.
Eligibility
The Champions League is open to each national association's domestic champions, as well as clubs who finish just behind them in their respective domestic championship. The number of clubs that can be entered by an association and their entry point in the competition depends on the association’s position in UEFA's coefficient ranking list.
The UEFA Cup was introduced for the 1971/72 season and features clubs that have qualified for the tournament from a variety of routes.
Eligibility
It is open to teams finishing in leading positions behind the champions in their domestic top flights, the winners of national cup competitions, the winners of the League Cup in certain countries, the eleven winners of the final matches in the UEFA Intertoto Cup, and three clubs from UEFA's Fair Play League.
UEFA European Championship
The groundwork for a European national-team competition began in 1956, two years later the first European Nations' Cup, now known as the UEFA European Championship, was under way.
Qualifying
The winners and runners-up in the seven qualifying groups will go through to the UEFA EURO 2008⢠final round in Austria and Switzerland.
Seven groups
The qualifying phase for EURO 2008⢠consists of one group of eight teams and six groups of seven. The qualifying competition will begin in the autumn of 2006, after the FIFA World Cup in Germany. Co-hosts Austria and Switzerland will qualify automatically.

Ben's is the best answer so far.
The Champions League (formerly called the European Cup back when it was a straight knock-out tournament) is the top competition for European club teams
The Uefa Cup is the second tier competition for European club teams. It is also sometimes called the Uefa Euro Cup, because this is its new "official " title..but this only confuses matters.
There is also The European Nations Cup (officially known as the Henri Delauney Trophy) , which is the the competiton held every four years for European national teams.
