i guess a man of words is one that speaks a lot and maybe he gets his way through speaking, whereas a man of word is one that will keep his promises.

a man of words means that a man is praiseworthy or is worth praising

a man of word means that a man keeps his promise

I think you mean "a man of his word" which is someone that keeps a promise and is idiomatic in its usage.
