These are generally called mores (mor-ays is how it's pronounced) and are considered very much linked to the actual culture that you're living in. If you're speaking about the US in particular, they are changing all the time.
For example, you shouldn't eat with your elbows on the table - one that I learned from parents - but I see people doing it and it's accepted all the time now. Spitting, chewing gum, blowing your nose in public - all of these have social customs and mores around them, for example, that have changed drastically in the last years.
The elevator one is not common. I think it's polite but I'm not sure it's a widely accepted more.
I think that you learn mores from your parents and immediate cultural influences - grandparents, school. Think of the ones you learned about "please" and "thank you" or regarding belching in public.

I think you're referring to social etiquette, not an easy topic these days. Lets see,
Opening a door for a woman.
Not walking around outside in your underwear.
Buying girl guide cookies.
Rescuing a stray animal
Helping an injured person
Not peeing in the pool
Don't clip your toenails in public
Don't fart or belch in public
Saying please or thank you (in my country at least)

Standing in line. Not farting in public, or belching. Not taking off shoes in a restuarant. Walking on the right side of the hall, or going up stairs. Talking softly at a funeral. Not talkiing with your mouth full.
