Loads of stuff: she signs card to every person in the UK who turns 100 and every couple reaching their 60th wedding anniversary, for starters. She's head of the Church of England, meets EVERY new British Ambassador (ie every new ambassador Britain sends to any country in the world...there are about 180 of these). She distributes Maundy money (look it up!)maintains huge estates, reads all the business of parliament, meets the PM weekly when parliament is in session, is the patron of goodness knows how many charities. She also does royal tours abroad and in the UK and of course is involved in the honours system which I think are distributed twice a year (once at New year and once at her birthday).
