The moon takes about a month to orbit the earth (month means moon!) and all surfaces are exposed to dark or unfiltered sunlight for a month at a time. Likely the chicken will remain frozen while in the dark although water ice could sublimate (and dry up) in a perfect vacuum. Once in the sunlight, the chicken would bake breaking down even fats and would become dessicated. Likely it would still taste like rattlesnake.

it will burst because there is no atmoshpheric pressure on the moon ... same like why we start nosebleeding at higher altitudes (as our body pressure exceeds the atmospheric pressure)
